The Easiest Whole30 Breakfast You Need To Try!

I recently began the Whole30, which is a program where you cut out all added sugars, dairy, legumes, grains, alcohol, and sulfites for 30 days. (You can click here for more information!) Whether you’re doing the Whole30 or not, this recipe is a fantastic one if you want to eat delicious food while being healthy! 

After the first couple of days of the Whole30, I realized I was going to have to find some new recipes. I mean, sure, you can have eggs every day for breakfast, but wouldn’t you want to spice it up? This recipe has now become my all-time new favorite Whole30 breakfast (although you could really have it for lunch or dinner if you wanted to!).

The ingredients used here—eggs, potatoes, and avocados—are all Whole30 approved, so I thought, Why not combine them in a super healthy meal? I’ve had this Whole30 breakfast two days in a row; it’s just that good, and I want to help you make it too!

I’ve found that it can be so hard coming up with meal ideas when you’re on the Whole30, because, let’s face it, the majority of things you currently have in your fridge are probably off limits. So, we have to get creative and take all of the whole foods we have and turn them into something great!

Whole30 Breakfast Ingredients

Potatoes

  • 1 potato
  • Garlic powder
  • Onion powder
  • Salt & pepper

Eggs

  • 2 eggs
  • Salt & pepper
  • Other seasonings of choice

Avocado

  • 1 avocado
  • 1/4 tomato
  • juice from 1 lemon wedge (I’m using 1 True Lemon Crystallized Lemon Juice Packet)
  • Salt & pepper
As stated above, I used a True Lemon Crystallized Juice Packet in lieu of lemon juice because I didn’t have any fresh lemons and the lemon juice I had on hand included preservatives. However, if you won’t be worrying about the Whole30 rules, you could go ahead and use preserved lemon juice if needed.

Whole30 Breakfast Instructions

First, I would recommend starting with the potato since it needs to be microwaved first and then also cooked on the stove. 

For the Potato…

  1. Cut slits on both sides and put into the microwave for a minute on each side
  2. Slice into wedges and add to a pan on medium heat
  3. Add in your seasonings and make sure to move the pan around so the slices get evenly cooked

Next, I would start with the eggs since these also need to be cooked on the stove. I usually do this in between steps 2 and 3 for the potatoes so that I can use my time as productively as possible 🙂

For the Eggs…

  1. Crack over medium heat in a pan
  2. Add seasonings and flip when the white is solid enough

Pretty easy, right? Just the avocado left! I typically begin with the avocado after cracking the eggs.

For the Avocado…

  1. Cut and scoop out the insides and add to a bowl
  2. Mash until the texture is to your liking
  3. Dice the tomato and add along with the lemon juice and chosen seasonings
  4. Mix it up

Ultimately, it may seem like a lot of jumping around between steps, but I can assure you, it’s nothing you can’t handle! If you feel more comfortable going in order by food, do that!
